Muffins Lunch Idea -25

I am back to the world of blogging after a small break and of course with my laptop fixed. Unfortunately I have lost some of my pictures but I am thankful that I didn't lose all of it. So back to my lunch box idea this is penne pasta with blue cheese dressing, kiwi and apples,the last container has pretzels and raisins.

I found this pasta recipe from the book I mentioned about earlier. It is a very simple and neat recipe with tomato sauce and blue cheese. The recipe also included fennel which i skipped.

Turnout:Muffin liked the pasta.He finished it with few cheese crumbles left. Kiwi is not one of his favorite fruits i guess but almost done with apples. Pretzels and nuts were gone in.I would give this lunch 4 stars.

Muffins Lunch Idea -24 From the cook book!

When i was browsing a book store i found an amazing vegetarian cookbook and bought it on a very good deal.It is loaded not only with good recipes but also with beautiful photographs with step by step illustration.I couldn't stop myself from trying this easy vegetable fajitas from the book.The fajitas were made with red yellow green bell peppers and onions.The peppers were marinated in vegetable oil and chili powder and stir-fried.For snacks apple pieces and tortilla chips are on the sides.

Turnout:The box was almost empty except for a few pieces of peppers and apples.I take it is a lunch which can be repeated.So 4 stars.

This is an extremely simple and easy to make lunch for some busy or lazy days.You might have noticed that most of the lunches i made are with bread or pasta.The reason is just that muffin is really fond of them and finishes them fast so i try to incorporate veggies and keep making variations in it.I have always strongly felt that sandwiches made with two bread is just not enough for muffin.For this lunch i made sandwich three slices and the middle bread i used was wheat.I know this is a little bit too much for a kid but i thought of taking chances and sending it all with him.This sandwich is simply made with butter and cucumber and topped with pepper and salt.

On the sides some mixed nuts and ritz crackers with cheese.

Turnout:As soon as muffin came from school he said "you gave me a LOT of sandwiches"..but then the three slices idea worked and liked sneaking in the wheat bread.He finished three fourths of it.A simple lunch is a good hit 5 stars.

Quesadillas are a very kid friendly mexican dish.I have never tried making quesadillas right from the scratch until I came across this recipe in sailusfood.Unlike most of the kids muffin is not a huge fan of quesadillas but i still wanted give that recipe a try.I made those for dinner the day before i packed the lunch and everyone seemed to like it so i saved some dough and veggies to pack for muffins lunch the next day as it is a bit much work to do in the morning. It took only few minutes to make it in the morning.

I also made a flower with cucumber and carrots just for fun and have to accept that i made a major blunder in doing so....hmm the mistake was that i didn't realise that it would get messed up on the way to school . Anyways as i have already made it i might as well send it as such. I filled the sides tortilla chips and grapes.

Turnout:Muffin liked the quesadillas but could finish only three fourths of them.I guess it is quite filling and also i guess it gets a little hard if not served hot but i would definitely keep this recipe.I felt it is way healthy with all the veggies and cheese inside.As i doubted muffin said that the flower made out of carrots and cucumbers was all messed up but he did have those inspite of the mess.. Chips and tortillas were eaten for snack.I would give this lunch idea 4 stars.

Pita pockets are traditional middle eastern bread.It is very convenient as it has a pocket which can be filled with anything and everything we like.It is a great and also a healthy alternative to the usual bread.We get pitas in all kinds like regular,wheat ,whole grain etc..Here i have stuffed the pita with tomatoes and cucumbers with ranch dressing.I also grilled the bread for few minutes before doing so.

On the side coco puffs cereals with pretzels and cantaloupe.

Turnout:A very quickly made lunch is a hit.Muffin loved everything in the box and so 5 stars.

Idlis or rice cakes are the staple breakfast in south india.It is very kid friendly,healthy and delicious.It is also one of those item that comes in handy for easy preparation at anytime of the day.The idlis have a very soft texture and so babies less than a year old can also have it.It is said that since the idlis have urd dhal it strengthens the babies legs and helps them to walk faster.Preparing the batter for idlis is a little intensive work but its all worth it as it can be stored for a minimum of a week.

The mini idlis are one of muffins favorites . After taking out the hot idlis i added butter on it and mixed it gently until the butter melts.As you can see i have tried to fill the lunch box with all round shaped food.The green container has pakoras another indian speciality.it is deep fried and it anyone from india knows that it goes perfect with tea on a rainy day.I made this pakoras with zuchinni and so i got the round shape.

The red container has melon balls and the blue container has indian cookies brand named "good day" which is made with cashews.The tiny container has raisins in it.

Turnout:I was very happy with this lunch box and muffin enjoyed every bit of it too.5 stars

It was a busy but good summer break.My son "muffin" was home after his summer camp for the past few weeks so i didn't have to pack the lunches. But i did try to come up with some healthy snack ideas and of course lunch ideas too.

The school has started and we are still getting back to the usual routine.Packing fun lunch box gets a kick start again.Hope to pack more fun and nutritious lunch for muffin this year.

The yellow container has penne pasta with onions,roasted red and yellow peppers and also garlic.I found an amazing fun recipe called "ants on a log" i gave it a small twist and so the green container has a similar recipe but instead of ants its "animals on a log".The log is made with carrots cut in half lengthwise and i have applied peanut butter on top of it.For the ani

mals as you see i have lined up some animal crackers.The other two containers have plums and green grapes in it.

Turnout:The pasta recipe is definitely a keeper. Even though muffin enjoyed the "log" he had a rough time eating it as peanut butter is little sticky.But basically everything in the lunch box is gone except for a bit of carrot stick.So 4 Stars.

This is one of muffins summer camp lunch box. Here is a cold sandwich to enjoy in the hot summer weather.I applied butter and added a slice of cheese in the sandwich. The green container has skewers with apple,pears and grapes. The blue container has cool cucumber,tomato and cilantro salad drizzled with kraft zesty italian dressing. The red container has dried fruits and yogos.

Turnout:Muffin loved this lunch box. Fruit skewers are fun to eat and he enjoyed the sandwich and the salad too.. so this is a huge hit summer lunch box i should say..5 stars.

This is a sunny summer morning breakfast for muffin.It is a very easy and simple to make egg omlet made with microwavable omlet pan. It is a plain omlet with salt and pepper.The sun has a shining pretzel rays,eyes made with grapes and a smile with tomato.

Muffin enjoys fun shapes with egg rather than plain egg as he is not a big fan of eggs.He just likes plain omlet and french toast with egg.I hope to come with different ideas make him like eggs as it is high in protein. Click here to read more about the nutrition

Before i write about this lunch box please excuse me for toying with the colors and templates of my blog just couldn't resist trying things out. This lunch box is way simple to make its just the easy cheesy mac and cheese only made with the kraft velveeta shells and cheese instead of the usual kraft mac and cheese.The big difference is that the velveeta pack has the cheese paste in a pouch instead of powdered cheese in mac pack.I feel the paste is better if the mac and cheese is going to be packed as it becomes less thickened. The green container has salad,the blue container is filled with juicy water melon and the red container has some crackers and yogo's.

Muffins Lunch Idea-16

Muffin had started summer camp.He enjoys the camp a lot. The camp timing is almost like his school timing and so i have to pack both snacks and lunch for him everyday. This is one of his summer camp lunch. The sandwich rolls are just grilled lightly with butter and cheese. I had to find a different way to give him cucumbers and carrots just for a change so here comes my idea to make cups out of cucumbers.I filled one cup with tomatoes and one with thinly cut carrot sticks. The tiny container has log like chocolate stick for a treat.

Turnout:A very light lunch has gone in fast. Muffin just loved everything in his lunch.5 stars

Eating Healthy

It has always been a challenge to make kids eat healthy food.I am sure every one of us would have wondered if our kids are getting enough nutrition. It is really tricky to instill good eating habits in kids. Here are some tips and tricks that i felt worked with my son.

Easy access to healthy snacks:I feel that healthy snacks has to kept in a reachable place for kids. Whenever i cut cantaloupes or any other melon i keep some on the table. Muffin used to go for it often.If nothing is out he always asks for cookies or would be ready for any junk.
Healthy cooking method: I prefer steaming,grilling or roasting over deep frying. But on the other hand i don't want my son to be deprived from eating deep fried food so i make it once in a while.
Let the kids cook:Muffin likes to play with food and cook.I have seen that whenever he prepares something on his own he enjoys eating it.We make it a family activity to make pizza/sandwich now and then.
Drinks: I prefer making fresh juice at home rather than buying the juice boxes so i get the golden opportunity to cheat by adding muffin's least liked celery stick to a sweet apple juice.
Grocery list:I have started making muffin write out the grocery list and we go for shopping together where i talk to him about healthy eating and getting him limited amount of junk food.He feels like a grownup since he is involved in all the activities.
Their opinion counts:Sometimes we discuss on what to make for lunch/dinner with muffin. Even though most of the days he prefers having pasta/pizza we talk to him and convince him to have rice our staple food. But of course some days we go with his idea so he feels that his opinion counts.

Muffins Lunch Idea -15

This is a south indian lunch i prepared for muffin. The big white round shaped one in the green container is called "kuli aapam" . In india you get a special pan to make these but since i didn't have one i used the pancake puff pans . The yellow container has "kadalai paruppu sundal" also called bengal gram or channa dhal. This dish is very healthy and easy to make.In the red container crackers with cheese and the blue has cherries. The little purple container has granola bites.

Turnout:Muffin likes the aapam but was not able to finish everything as it is quite filling.He liked the sundal .The crackers and cherries were gobbled up easily.4 stars

Muffins Lunch Idea- 14

I thought of making mexican lunch for muffin.Since he likes "chalupas" from taco bell i got taco shells and filled it with fried pinto beans,salsa and sour cream.I grilled the shell before filling it so it was a little crispy.I gave tortillas and salsa in the green container,beans in the red container and lastly orange pieces with a worm in the blue container.

Turnout:Muffin liked the taco shells,oranges and tortillas but the beans was left completely untouched.I have to find ways to hide beans in his lunch. I would give it 3 stars.

I wanted to try out this pasta for a while i came across this recipe long back and i got a chance to try it a few weeks ago. This is penne pasta with philadelphia chive and onion cream cheese together with milk. The green container has caesar salad and on the side grapes,pound cake slices and the tiny container has granola bites.

I have sent this lunch idea to margot's "wholesome lunch box event"

Turnout:Muffin just loved the pasta but of course few pieces of salad were left.Rest everything gone! 5 stars

Muffins Lunch Idea -12

Muffin graduated kindergarten.We had a very nice graduation ceremony.I did some search on the net for some ideas to create a good graduation lunch.I found a few but i modified almost everything according to my convenience since i wanted to make it a simple easy task.I still had doubts on how well it would come out so tried to get my thoughts into action the day before.

So here goes the graduation lunch.

I came through an excellent idea of creating books out of cookies where they had given the recipe for baking cookies and then topping it with icing and writing on top of it.I felt that is an extensive work so i just took a slice of cheese and folded it into four and again folded the top portion so it looks like a book.muffin doesn't like gel coloring so i wrote "KG-2008" with sprinkles.

Next pencils out of pretzels.I sharpened the pretzels and showed it to muffin and he said the pencil should have an eraser so i made tiny balls out of muffins "stacker/sticker candy" and poked a little hole in the middle and inserted the pretzel in it.

The diploma wraps were very easy to make.I made a simple

butter/cheese sandwich without crusts,rolled it and tied with a thin strip of carrot.

For the grand finale i made a graduation cap as a treat.I used peanut butter cups as a base and hershey's rectangle chocolate and twizzlers for top.

Turnout:Hurray for my efforts.Muffin and his friends of course loved the caps more than anything else. His friends also asked muffin how i made the caps and he said that i just glued everything.Well thats an easy way of explaining how i made it.Anyways the wraps & pencils were gone.The cheese was left and he said it became "mushy" and that has to be noted.So i would give it 5 stars

Muffins Lunch Idea-11

Here is muffins "fathers day" lunch box.I tried to make shirts out of crackers and cheese.The ties are made of bell peppers and decorated with icing.The red container has pears and i made double decker cucumber sandwich with butter sprinkled with salt and pepper.Last but not the least a fruit flavored slice is peeking from the middle of the sandwiches.

Turnout:5 stars for muffins fathers day lunch.Muffin loved the cucumber sandwich and the shirts were a hit!

Muffins Lunch Idea-10

Spinach pasta with tomato sauce,corn bread slices.a piece of strawberry fruit strip,raspberries,grapes and some dried fruits and in the red container lightly salted mixed nuts.

Turnout:A good one! Muffin enjoyed having everything although he missed few dried fruit pieces.5 Stars.

Muffins Lunch Idea-9

Muffin likes to have roti's for lunch but doesn't like the idea of having it with the dhal.So i had to add some nutrition to the roti's.I made colored rotis red with pureed beets,green with pureed peas and orange with pureed carrots and the top container has strawberry crisps and fruits snacks the red container is filled with dhal,made non squishy and can be eaten separately and blue with apples.

Turnout:The lunch box was empty except for the dhal so 4 stars.

Muffins Lunch Idea-8

I happen to find spinach pancakes in the whole foods market and i thought of trying it for lunch.So spinach pancakes,strawberries,dried dates,scooby snacks,and pasta salad. This pasta salad is very easy to make and can be made the day before. The salad has cucumbers & cherry tomatoes.I topped it with mccormick's garden vegetable salad toppins.

Turnout:Muffin didn't like the pancakes but it is new so it might take a few more try to get him to like the taste as always. Pasta salad went well.So 3 stars.

Muffins Lunch Idea-7

Muffin loves penne pasta ( i used wheat penne here) with almonds and croutons. This pasta is very simple to make but its a bit dry since it doesn't have any sauce in it.On the side i gave him steamed carrots,beans and corn.I also tried to make mice out of strawberries with almond ears,raisin nose & used coloring gel for the eyes and i was extremely happy with the result.

It came out pretty good don't you think??

Turnout:everything was gone except for some veggies.He just loved the mice and the pasta.5 stars.

Muffins lunch for the day is the classic grilled cheese sandwich also known as cheese toast,yogurt tube, popcorns, pretzels, grapes and apples.

This lunch is a very good option when we are running out of time.

Muffins Lunch Idea-5

Muffins lunch for the day is south indian upma which is made out of coarse ground wheat called rava.I did add some veggies to it and i moulded it in bear shape with the help of japanese rice moulds.The bears eyes were made with channa dhal and nose with mustard seeds.

I also tried making two strawberry bugs one of which came out ok..but the other bugs head came off..the bugs pretzel leg is not seen clearly in the pictures.

Turnout:Upma is quite filling muffin left a little bit and he loved having bugs.i would give it 4 stars.

Muffin likes egg noodles with butter for lunch so there it is with blanched string beans,mangoes and some scooby snacks.

It went ok but few string beans were left.

Its time for P B & J ..i added few slices of apples with the sandwich and on the sides strawberries,melon balls and yo kids squeezers.

The apple slices in the pb&j didn't go well with him.

I thought i would try giving muffin indian roti made out of durum wheat and almonds and along with it as you can see i gave him melon balls,grapes and mini toasts.It was a huge hit!

I was absolutely thrilled to pack the first lunch in the laptop box. I packed broccoli littles, strawberries,butter cookies and butter pasta.

I didn't want to stuff the box since its always better to make him crave for more.I feel this trick always works on him.

I Think I Found Treasure!!
I usually pack my sons (let me call him muffin here) lunch in lock and lock containers. They used to workout good but i wouldn't say great.I did some research and found these laptop lunches . At first i thought my son might miss the compartments and also i wasn't sure that he would enjoy it because it doesn't have any pictures on top of it but it was so attractive that i couldn't resist buying it and so i took my chances.

When my son first saw it he was so excited and happy. Now he carries his lunch bag everyday with a grin! I just love it and so i should say its my treasure!

As we all know "Necessity is the mother of all inventions" i am an average cook who is in need and interested in learning how to pack fun healthy lunches. There are lots of books and websites which gives us numerous recipes and lunch ideas and i intend to share my little knowledge that i have gained in this blog.

I have a picky eater at home who needs varieties and well presented food everyday so the reasons for creating this blog would be

to learn new recipes and ideas
to keep track of his lunches
try to make healthy lunches
share my thoughts and ideas with friends and family

Last but not the least its not a bad idea to save the lunch money too..and who knows maybe my photography skills would improve also!!
